I used to post all 5 recipes in one post but this prevented me from adding search terms (chicken, freezer, etc.) to each recipe. Recipes are seasonal so look back a year or two ago to see what I was posting in that same month! I'm in the process of going back and indexing earlier recipes. that will be posted separately from the meals. You will find ONE FULL YEAR (plus more, as I continue to add) of weeknight meals. Bake uncovered until the sauce is bubbling and topping turns golden brown, 15-20 minutes. In a small bowl, melt the remaining 1 tbsp butter and mix in the 1/2 c. Pour the mixture into a greased 2-quart casserole dish. Stir in the warm cream and the shredded cheese until it starts to melt. Drain the hot cooked pasta and add to the bowl with the butter and toss to coat.

Meanwhile dice 3 tbsp of butter and place in a large mixing bowl (different than the one you'll use to bake the mac & cheese). Cook pasta 1-2 minutes shy of what the package says so it's al dente. You can also crush the Ritz crackers and shred the Muenster cheese ahead of time.ġ. This is a really quick recipe but to make it even quicker, cook your pasta the night before just al dente (a minute or two before the cooking time listed on the package) then drain and toss with a little olive oil and refrigerate.

  • While pasta cooks, heat a medium saucepot over medium heat.
  • To boiling pasta water, add pasta and salt to season the cooking water.
  • Sauté a couple of minutes, then add onion and cook another 5-7 minutes until onions are tender and chicken is cooked through. Add oil, and chicken and season with salt and pepper.
  • Heat a medium pan over medium to medium-high heat.
  • I topped this comfort food with butter and ritz cracker topping and drizzled a little hot sauce for an extra kick before serving. I like to use block cheese that I shred before but do what ever is easiest for you. We used low fat milk so it took a little longer to thicken but saving the calories is always nice.Ĭook your chicken and onions at the same time and they will be nice a flavored vs just putting in baked chicken from the oven.

    This is the hardest part of homemade mac and cheese, you just have to commit to standing around a little. This might looked burnt but this roué has spices in it. Don’t get me wrong I always have a box or two in the house so the kids can make a quick snack or dinner but when it’s family dinner homemade mac and cheese is the only way to go. There is no need to feel intimated making mac and cheese, while it may take a little time it is so much better than the boxed variety. You don’t have to bake this mac and cheese recipe either, I just added it to the oven for a while as I added a Ritz cracker topping. Homemade Mac and cheese is such a great comfort food casserole and by adding some baked chicken at the end you have a complete meal. When it’s this cold outside all I want all day are warm meals, staring with oatmeal in the am to a cup of soup for lunch and some comfort food for dinner.
